This week, Co-founder Alasdair Day sat down with the BBC Radio 4 Food Programme to discuss the fascinating history of casks and maturation, as well as the unique recipe and policy we have here at the Isle of Raasay Distillery.
In the interview, Alasdair discusses the two spirits we produce – peated and unpeated – which mature separately in Chinkapin oak, Bordeaux red wine, and Rye Whiskey casks. A first in Scotch whisky history, each develop a fascinating selection of flavours and characters, all of which we shall draw together for our upcoming single malt later this year.
