Wonderful new craft distillery. We had a really warm welcome and our guide Callum was very generous with his time and knowledge. The distillery is in a wonderful setting, with amazing views of Skye from the still room and adjoining hotel. Inside the distillery is ultra modern, all gleaming stainless steel and copper. The small scale means it is easy to see and grasp the process. Callum was passionate about what they are trying to do at Raasay – creating quality single malt whisky which is truly of the island, doing as much of the process as possible on site, and even experimenting with growing barley on the island. We’ll have to wait a few more years for their whisky to be ready to taste, but if the third release of ‘while we wait’, (distilled elsewhere to their specification, and finished in Tuscan wine casks, adding depth to a lightly peated fresh young whisky), is any guide, it will be worth waiting for. I have been to a lot of distilleries but this was a special experience.
