Last Orders is the fifth and final instalment of our ‘While We Wait’ series. Here begins the countdown to our inaugural Isle of Raasay Single Malt bottling later this year!
This bourbon matured single malt Scotch whisky spent 18 months finishing maturation in first and second fill Tuscan red wine casks. We chose the Montechiari vineyard in Tuscany for their excellent quality French oak casks that have given the spirit character, a bounty of dark fruit flavours, and reddish amber hues.
A Taste of What’s to Come
The Last Orders release combines heavily peated and unpeated spirit expressions to produce a lightly peated, fruity single malt with smokiness on first nosing, a dry peatiness on the palate, a dash of orange zest from the nose, and an oaky, buttery finish. It leaves a delicate balance between wine and smoke.
Similar in style and character to Raasay While We Wait Last Orders, our inaugural Isle of Raasay Single Malt is also a bourbon matured Scotch whisky that is currently finishing in Bordeaux red wine casks in the heady island air of our Raasay warehouses.
