The Story Behind this Release

Why “The Full Monti”?

It’s a playful yet factual name that brings together the three defining elements of this Limited Release,

1. Stripping back our lightly peated signature style: Crafted entirely with 100% unpeated Raasay spirit.
2. Amontillado maturation: Spent a full three years in ex-Amontillado sherry casks after its initial three years in ex-Rye barrels.
3. 100 UK Proof: Bottled at 57.1% ABV for maximum depth and full intensity of flavour.

Distilled with Intent in Jerez & Raasay

Inspired by our Co-Founder and  Master Distiller Alasdair Day’s exploration of the bodega cellars in Jerez, The Full Monti isolates the dry, nutty complexity of Amontillado sherry. By pairing three years in ex-Woodford Reserve Rye barrels with three full years in 250-litre ex-Amontillado hogsheads, the spirit undergoes a complete flavour transformation.

Bottled at 100 Proof UK (57.1% ABV), The Full Monti pays homage to historic British distilling and maritime heritage. Dating back to the 18th century, spirit strength was tested by mixing alcohol with gunpowder; if the mixture still ignited, it provided “proof” that the spirit was at full strength.

When tasting the final vatting, our distilling team discovered that the unpeated spirit and dual cask influence reached their absolute peak of balance and depth at this higher strength. Bottling at this historic proof preserves the whisky’s full body and rich flavour intensity, allowing the delicate Amontillado notes to shine while giving you the freedom to explore its evolving layers with a drop of water in the glass.

Every drop is distilled, matured, and bottled on the Isle of Raasay, carrying our proud 2017 community population of 161 on every bottle.  A number which has grown considerably in the last 9 years since our distillery opened.

Tasting Profile

• Nose: Soft vanilla and salted nuts paired with gentle hints of warm caramel.
• Palate: Honey roasted peanuts, vanilla, rich butterscotch, caramelised sugar, and crunchy toffee nut brittle.
• Finish: Long and warming with lingering vanilla, salted caramel, and roasted almonds.
